Y aquí está la segunda parte de la receta que publiqué hace un par de días, las galletas conejo. Como os comentaba en esa entrada, una vez cortadas las galletas podéis volver a amasar los trozos de masa que van sobrando, y repetir todo el proceso: congelar, estirar, volver a cortar… Pero si tienes prisa, pereza, o como me suele pasar a mí, una mezcla de ambas, puedes preparar estas galletas tamaño mini, que te permiten aprovechar al máximo esos recortes de masa que van quedando cuando preparas galletas con cortador.
Lo mejor? Que ni siquiera necesitas un cortador de galletas, de hecho las de las fotos las corté usando un descorazonador de manzanas… Se trata de aprovechar lo que tengáis por casa! Un tapón, un anillo, lo que se os ocurra! La opción de agujerearlas o no, es una cuestión meramente estética, aunque los agujeros también ayudan a que las galletas se horneen más uniformemente… Pero en galletas de este tamaño no se nota apenas la diferencia, y de las dos maneras estarán riquísimas! Eso sí, aunque sean similares, no saben como las mini galletas Príncipe: el relleno es bastante parecido pero la masa difiere bastante.
Gracias a su pequeño tamaño son una opción ideal para que los más peques lleven el almuerzo al cole, y para que coman galletas rellenas de chocolate sin que después tengas que quitarles el chocolate hasta del pelo (se toman en un bocado). Aguantan perfectamente toda la semana en un recipiente hermético (incluso un par de semanas).
