¿Alguna vez has probado las galletas Petit Ecolier? Creo que eran mis galletas favoritas en la infancia, y aún hoy las sigo comprando de vez en cuando. Me encanta el toque crujiente de la lámina de chocolate con la galleta de base. Hoy te traigo una versión de estas galletas sin huevo, con una base de galleta de pistacho y vainilla con chocolate negro.
Lo más interesante de esta receta de galletas es que no llevan huevo, como tradicionalmente se añade. Además de que pueden consumirla personas alérgicas al huevo, me gusta mucho porque vamos a obtener un resultado muy crujiente y fino, como las pastas de té. Esta receta es la que suelo utilizar cuando hago galletas decoradas, solo que esta vez he optado por añadir un puñado de pistachos que le ha dado un toque más crocante y delicioso.
Ya se acerca la Navidad y este tipo de recetas me encantan, pues ahora me gusta mucho tener invitados para una merienda y a todo el mundo les encantan. También son ideales para hacer un regalo hecho por ti. Al hacer las galletas puedes meterlas en bolsitas individuales, cerrarlas con una bonita cuerda e incluso hacer pegatinas felicitando un cumpleaños o la Navidad.
